A goodnight message

I just wanted to add a quick goodnight and a great recipe that you should try sometime. This recipe was passed on to me by my mother who got it from a recipe that she got back in the sixties or seventies, but it is a great recipe. The kids absolutely love it! And husbands love the smell of it at the end of a long hard day.







Pineapple Chicken

1 whole chicken (cut up)
1 or 2 cans of canned peas
1 or 2 cans of sliced pineapple
3 to 4 medium yellow onions
Butter or Margarine
Vegetable Oil
Flour
Salt
Pepper
Paprika



Pre-heat oven to 425˚f and heat two to three Tbsp. butter or margerine in a skillet on medium.
Brown pineapple slices on both sides in skillet and set aside pineapple juice from the can for later. Remove pineapple slices from skillet and set aside.
Sautee sliced onions in the same skillet until caramelized adding butter or margarine to pan as needed. Remove and set aside.
Combine flour, salt, pepper & paprika (spices to taste) and roll chicken pieces in flour until well coated. Adding vegetable oil to the skillet, fry chicken in skillet on both sides until golden brown and cooked through.
Place fried chicken in small roasting pan or large round casserole dish.
Cover fried chicken in pineapple slices, sautéed onions and canned peas.
Pour reserved pineapple juice over the top of all.
Cook dish at 425 for 30-45 min. until flavors are well blended and peas are slightly browned.

*Makes about 4-6 servings.



**Suggestion - for 4 or less you may use one can only of peas and pineapple and 3 onions but for 5 or more it is better to use 2 cans and 4 onions so there is plenty to go around. You can double it by using two chickens and still only use two cans and 4 onions if you plan to have company. The onions and pineapple tend to go quick, and you rarely have many leftovers.
